Mint and Bean Patê

In the Summer of 2017 I decided to research Spanish Tapas to have a Tapas party for our soccer team. I borrowed several books from the University Library and tried several recipes. This one was the best of them all. Its a nice and refreshing taste for a Summer appetizer. The original recipe is with fresh fava beans. I substituted for canned fava beans. I also have done with canned white beans. If using fresh fava beans you will have to boil the beans for about 10 minutes and then, while they are still warm, slip them off their skins. I can’t stand the flavour of raw garlic. Thus I replace the one clove of raw garlic for two cloves of garlic dry-roasted in a pan. I also take the edge of the scallions by simply gently warming them in the same pan that I roasted the garlic.

  1. Preparing garlic and scallions
    • Choose a very small frying pan with a lid
    • Put the two garlic cloves, with their skins on into the dry pan and cover
    • Place over moderate heat and monitor every few minutes.
    • Turn the garlic cloves once they lightly brown on one side.
    • They are done when the flesh is soft and slightly transparent.
    • Remove the pan from the hot burner.
    • Remove the garlic from the pan.
    • Add the olive oil to the pan.
    • Immediately add the scallions, stir, and let them warm up in the residual heat for about three minutes.
  2. Process the patê
    • Process the beans in a food processor until you obtain a rough paste
    • Add the cheese, garlic, scallions with oil, lemon rind and lemon juice and process.
    • Season with salt and freshly grated pepper to taste.
  3. Serve
    • Put in a bowl
    • drizzle with extra-virgin olive oil
    • Serve with the slices of French bread around.
